The first delicious recipe I would like to do is called a "Sugar-free Homemade Pudding and it is simply scrumptious. I am a diabetic Type 2 and I constantly crave sweets so this is one that is right up my alley. Here is the recipe:
2/3 cup of sugar-free substitute
2 tbsp cornstarch or if you don't have that use 1/4 cup of white flour
2 1/4 cups milk
3 lg egg yolks
3 tbsp margarine
2 tsp vanilla extract.
I put stove at medium and combine all the ingredients together. Using a small whisk I constantly stir the mixture which does take about 15 minutes, until the mixture thickens. It will tend to thicken quicker with the cornstarch, but the flour will thicken it up just as well. Once it has thickened to a heavy consistency you can remove it from stove and pour it into a bowl and cover with plastic. Then put it into the refrigerator where it will cool and get even thicker. It is the most wonderful pudding in the world and very easy to do. Enjoy and remember, you don't have to be diabetic to enjoy sugar-free foods.
